I am too lazy to use the grill so will cook indoors.  Tonight we're having hamburgers, corn on the cob, coleslaw (made with purple cabbage & carrots) and watermelon.

I have been craving hot dogs, but don't want to buy them because my husband is indifferent to them.  As for me - I could eat the entire package over the course of a few days.  But I don't really need to do that.

We finally got gas for the grill. We never got around to it last summer. So we had steak and baked potatoes.  Very traditional.  I had some left over cole slaw type salad from last night but we both filled up on the steak so salad is held over for tomorrow.
If you choose not to find joy in the snow you will have less joy in your life, but still the same amount of snow.

Lasagna. Ground beef, hot Italian sausage, mushroom, green pepper; diced tomatoes, and lots of tomato sauce (with a tablespoon of instant espresso powder to cut the sweet); herbs and garlic powder. Ricotta, provolone, parmesan, and mozzarella.

Tomorrow: burgers made from chuck and sirloin I ground myself; fries or chips (haven't decided yet).

It was "use up stuff stir fry" here tonight.

I'd made ribs on Thursday, we ate ribs both Thursday and Saturday, but there were just a few left. 

So a stir fry with minced rib meat removed from the (very meaty) ribs, carrots, green and orange peppers, garlic, scallions, zucchini, & peanuts over rice from the freezer.

Quite good, actually.

Edited to add - I made it pretty spicy.  Sriracha, hoisin sauce, a lot of black pepper and some tamari.

I'm going to try this as well, although I may make adjustments (I almost always do) and maybe try to make my own tikka masala sauce.

I don't eat a lot of prepared food, but one that I eat and love is frozen chicken strips.  We usually put buffalo sauce on them and eat with salad with blue cheese dressing.  This recipe seems like a variation of sorts to that - crunchy vegetables, spicy sauce, chicken strips or nuggets.

I made this last night for dinner. The tikka masala sauce was This Little Goat brand, which I can find around here but it's Stephanie Izard so I'm not sure if it's nationwide yet. I used frozen chicken nuggets and this was very easy, I used just cilantro in the yogurt sauce but mint would be lovely.

Breaking news:  I cooked this.

As usual, I didnt have all the right ingredients but even with all my typical lameass shortcuts/workarounds, it was really tasty & easy.

I'm so glad! I used brown rice (microwaved packed) instead of quinoa.

It was better than frozen chicken nuggets and microwaved rice usually is.

Monday: pizza bread with last weeks meat sauce (plus some cheesy garlic bread because I ran out of sauce before I ran out of bread).
Tuesday: hash browns, sausage, and fried eggs (runny-ish yolks for me; smashed yolks for downstairs neighbor).
Today: bone-in center cut pork chops; au gratin potatoes.

I bought some ribs, thinking I'd cook them today but when I woke up it was 50 degrees and raining. I decided I wanted to make the ribs on a warm and sunny day after gardening. 

So I brought out hamburgers from the freezer, served with pepper jack cheese and avocados (no buns) and roasted yellow potatoes seasoned with cajun spice.  Plus a salad of mixed greens, walnuts and blue cheese dressing.

Not bad, not bad at all.

Afro-Portuguese tonight!  Everyone dove into take-out of grilled spicy chicken, grilled corn and sweet potato slices, and some went for the fries with peri-peri salt and sauce.  We went hiking this afternoon, as the weather is just about perfect, and appetites were definitely sharpened.  A grilled feast seemed in order.

It hit the spot.  :)

Cross-cut style beef short ribs; spice rubbed and slow cooked in the oven (thank goodness for cool spring days); will be finished with Famous Dave's rich and sassy BBQ sauce. Roasted golden Idaho potatoes (salt, pepper, parsley, olive oil).

So the fried rice will be made up of leftover saffron rice, corn, leftover stuffed poblano, seasoned steak, (maybe the chicken from the empanadas), pico. Corn tortillas on the side.

As for tomorrow, along with the steak enchiladas, I'm seriously thinking about refried bean and cheese enchiladas. If that happens, I'm thinking Saturday will be leftovers, and I'll save a trip to the Mexican place for another day.
